At our Wagyu Tasting Events this pesto with wagyu beef tallow incredibly celebrated. Reason enough for Bjoern to now provide us with the recipe.

You need the following ingredients for one serving:

  • 150 g Wagyu Beef Tallow / Fat ➡ available in the online store
  • 80 g parmesan
  • 2 bunches of parsley
  • 3 sprigs of rosemary
  • 1 bunch of chives
  • 5 sprigs tarragon
  • 40 g smoked almonds
  • 1 level teaspoon sea salt
  • 2 pinches of brown sugar

With the herbs you can vary. Chop the herbs, almonds and Parmesan very finely and mix everything with the slightly heated fat. Then season the pesto with salt and sugar.

The pesto is quickly prepared. Airtight sealed, it keeps in the jar even refrigerated for a few days. Many thanks to @time_to_meat!
