TATAKI SKEWERS WITH GRILLED FENNEL

Bjoern gave the Wagyu Tataki a thyme glaze for Europe's largest barbecue magazine FIRE & FOOD🥇. It was accompanied by grilled fennel served with a vinaegrette.

You will need the following ingredients for 4 people:

For the skewers

  • 400 g Wagyu Tataki ➡ available in the online store
  • 1 tsp salt flakes
  • 1 tsp andaliman pepper
  • 5 sprigs thyme
  • 3 tbsp maple syrup
  • 1 tbsp olive oil

For the fennel

  • 1 fennel
  • salt
  • brown sugar
  • olive oil
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 2 tsp mustard
  • juice of one organic orange
  • 1 red chili
  • Pepper

You will need a direct and an indirect range for this dish at about 220 degrees. Since the fennel takes much longer to cook than the skewers, we'll start with that as well. Remove the fennel tops and set them aside for later.

Cut the fennel into eighths, drizzle the cut surfaces with the olive oil and sprinkle a little salt and a pinch of sugar all over. Now grill them directly from each side for 2-3 minutes each. When the vegetables have roasted aromas, place the fennel in the indirect area. While the fennel is cooking, you can take care of the meat.

Put the pepper in the mortar. I deliberately chose Andaliman pepper because it has great citrus flavors. Crush the pepper and add the salt flakes, oil, syrup and thyme leaves to the mortar. Grind everything again. Cut the steak into strips and add to the marinade. Mix everything well and then skewer the pieces of meat.

The small skewers will be ready very quickly. Therefore, first make sure that the fennel is almost ready. It should cook indirectly for about 20 minutes.

Quickly mix the vinaigrette. Mix the oil and orange juice and mustard together and stir until well combined. Now mix in the honey, the seeded and very finely chopped chili and season with salt and pepper.

Now grill the skewers directly from both sides for 1-2 minutes each. Keep an eye on the skewers. Due to the syrup, the sugar contained can quickly caramelize (intentional) and then become too dark (not intentional).

Now dress the fennel with the vinaigrette, add the Tataki steak skewers and enjoy.
