wagyu ossobuco


The wagyu sliced shin promises for meat lovers a surprising new taste experience, which also Bjoern @time_to_meat more than convinced 👌

The sliced shin is braised with vegetables until it falls apart and is nice and soft. With appropriate spices, PakChoi and rice it´s a delicious asian dish.

You will need the following ingredients for 4 people:
- 2-4 sliced shin (available in the online store)

- 3 cm ginger
- 3 cloves garlic
- 2 spring onions
- 4 carrots
- 0,5 celeriac
- 1 tsp sambal olek
- 100-200 ml soy sauce (according to taste)
- 1 tbsp sugar
- 1 nashi pear
- 1 tbsp sesame seeds
- 1 tsp sesame oil (unroasted)
- 2 shallots
- 380 ml beef stock
- 1 tbsp rice vinegar
- 1 tablespoon ketjap manis
- some fat for frying
- 1 tbsp. pepper
- 1 tsp. salt
. 1 red chili

Bjoern prepared the ossobuco in the DutchOven. If you do it in the grill, preheat the grill to about 200 degrees. If you're using coals, you'll have to see how many briquettes you need depending on the heat, calculate about 7 briquettes on the bottom and 12 on the top. If you cook on the grill, put the pot directly into the grill, so that it can also heat up.

In the meantime you can peel and chop the vegetables. Ginger, garlic, spring onions, celery, pear, shallots and the chili are finely chopped. When the vegetables are cut and the grill or the coals are hot, you can start.

Score the outside tendon of the leg slice and sear the meat in a little Wagyu fat in the Dutch oven until nicely browned. Remove the meat from the pot and then sauté the vegetables in it. When the vegetables have also browned a bit, deglaze them with soy sauce and half of the stock and put the leg slice back into the pot.

Now add sambal olek, sesame seeds, sesame oil, vinegar, pepper, salt and sugar and let it stew for about 2 hours. The time is only a rough guide. More important is that the meat is nice and soft. Check the liquid level in between and add some stock if necessary.

As soon as the meat is soft, stir in Ketjap Manis and let it simmer without a lid for another 5 minutes, so that the mixture can reduce a bit. Taste it again if necessary. As a side dish we recommend some pak choi and rice. The Asian Ossobuco from Bjoern @time_to_meat is a real taste bomb and is loved by many of our customers!
